Turkey zucchini taco boats make the perfect delicious and healthy dinner! They’re so easy to prepare and are a great low carb weeknight dinner.

Easy, healthy, and delicious weeknight dinners are my favorite. On a busy night, I don’t want to spend tons of time making an elaborate dish. That’s why I love these Turkey Zucchini Taco Boats. They require very little hands on time (especially if you have some meal prepped ground meat on hand), and they’re so easy to put together.

I always use my Ground Turkey Taco Meat recipe to fill these zucchini boats. If you choose to use a different meat recipe, be sure that it’s a very flavorful recipe, because all of the flavor in this dish comes from the meat.

How to make zucchini taco boats:

To make these taco zucchini boats, start by cutting the zucchini in half lengthwise. Then you’ll use the tip of a spoon and a dragging motion to scoop out a well in the center of the zucchini.

Place all of the zucchini halves in a baking dish that’s small enough to support the sides of the zucchinis. Fill the wells with ground taco meat and top them with shredded cheese.

Bake them at 375 F for 15 – 20 minutes (or until the zucchini is cooked through and the cheese is melted and bubbly).

You could also call these turkey enchilada stuffed zucchini boats. They’ve got that delicious taco flavor from the seasoning on the turkey, but the zucchini and melted cheese mimic a healthy enchilada.

Not only are they healthier than enchiladas, they’re also so much easier to make! Healthier, easier, and just as tasty is a win-win-win in my book.

  1. Preheat oven to 375 F.
  2. Wash and dry the zucchinis.
  3. Cut off the stems, and then cut in half lengthwise. Using a spoon, make a dragging motion to remove the insides of the zucchinis to create zucchini boats.
  4. Lightly grease a medium sized cast iron skillet and place the zucchini boats inside.
  5. Spoon ¼ of the Ground Turkey Taco Meat into each zucchini boat.
  6. Sprinkle the cheese over the zucchini boats.
  7. Bake for 15-20 minutes, or until the zucchini is cooked and the cheese is melted and bubbly.

Notes

Notes: If you’re using a larger baking dish, you’ll need to multiply this recipe. The zucchini boats need to rest up against the side of the dish and against each other to stay upright.
