What Is Bruschetta Chicken?
Bruschetta chicken bake is a chicken breast dish that uses chicken in lieu of toasted bread. The chicken is baked with Italian spices, then topped with melted cheese, and finally topped with bruschetta before serving. You can also drizzle it with a balsamic glaze if you’d like.
How To Make It
I like really flavorful chicken, and to get that, it’s so important to take the time to slice the chicken into thinner pieces and then pound it to an even thickness. When you do that the marinade has a chance to create flavor in every bite, which makes the dreamiest chicken.
After you marinate the chicken, all you have to do is bake it until it reaches an internal temperature of 165 F. Then you’ll add the cheese and broil it until it’s golden brown.
Finally, you’ll make some homemade fresh tomato bruschetta and top the chicken with it.

BEST Bruschetta Chicken Recipe
Bruschetta chicken is marinated then baked. Then it's topped with broiled mozzarella and fresh bruschetta for serving.
Ingredients
Chicken:
- 2 medium boneless skinless chicken breasts
- 1 Tablespoon olive oil
- 1 Tablespoon Italian seasoning
- 1 Tablespoon white wine vinegar
- 2 medium cloves garlic (diced)
- Salt (to taste)
- Pepper (to taste)
- 1/3 cup freshly shredded pizza mozzarella
Bruschetta Topping:
- 6 medium tomatoes (chopped into 1/4” cubes)
- 1/4 cup lightly packed fresh basil (diced)
- 1 Tablespoon olive oil
- 2 medium cloves garlic (diced)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Slice the chicken breasts in half horizontally to create two even thickness filets. Use a meat mallet to pound each filet to a thin even thickness.
- In a small bowl, mix together 1 Tablespoon olive oil, Italian seasoning, white wine vinegar, 2 cloves garlic, salt, and pepper to make the marinade. Coat the chicken in the marinade, cover, and refrigerate for at least 30 minutes (but preferably 6 hours).
- Preheat the oven to 425 F (218 C). Bake the chicken on a rimmed baking sheet for 12 minutes (or until the internal temperature reads 165 F on a meat thermometer). Sprinkle the shredded mozzarella over the chicken. Turn the oven to broil, and broil for 1 - 2 minutes, or until the cheese is melted, golden brown, and bubbly.
- Add the bruschetta topping ingredients to a medium bowl, and stir to combine. Spoon the topping over the cooked chicken, and serve immediately.
