Bruschetta Chicken

Simple, healthy, homemade meals like this Bruschetta Chicken are basically my favorite. Especially when they’re packed with flavor from an easy marinade and topped with fresh herbs. And don’t forget that delicious melted cheese.

Literally all the good things are in this dish, and I can’t even tell you how many times we’ve made it so far (like we’re entering double digits within a month of first making this recipe, it’s just the best).

I’ve partnered up with Klarbrunn to bring you this incredible and easy weeknight dinner. All the fresh flavors of the diced tomatoes and fresh basil pair perfectly with their bright Lemon Sparkling Water. I love enjoying a cold can of it with dinner. You can find out where to buy Klarbrunn here.

What Is Bruschetta Chicken?

Bruschetta chicken bake is a chicken breast dish that uses chicken in lieu of toasted bread. The chicken is baked with Italian spices, then topped with melted cheese, and finally topped with bruschetta before serving. You can also drizzle it with a balsamic glaze if you’d like.

How To Make It

I like really flavorful chicken, and to get that, it’s so important to take the time to slice the chicken into thinner pieces and then pound it to an even thickness. When you do that the marinade has a chance to create flavor in every bite, which makes the dreamiest chicken.

After you marinate the chicken, all you have to do is bake it until it reaches an internal temperature of 165 F. Then you’ll add the cheese and broil it until it’s golden brown.

Finally, you’ll make some homemade fresh tomato bruschetta and top the chicken with it.

What Goes With Bruschetta?

If you’re wondering what to serve with bruschetta, think of anything that reminds you of Italian food. Italian green beans are a great vegetable pairing, and if you’re looking for something a little more filling, pasta, rice, and flatbread are all great options.

Is It Gluten Free?

Yes, this recipe is naturally gluten free as long as you use certified gluten free ingredients.

Is It Keto?

Yes, this is a naturally low carb recipe that’s a great option on the keto diet.

Prep Time 10 minutes
Cook Time 15 minutes
Additional Time 30 minutes
Total Time 55 minutes

Ingredients

Chicken:

  • 2 medium boneless skinless chicken breasts
  • 1 Tablespoon olive oil
  • 1 Tablespoon Italian seasoning
  • 1 Tablespoon white wine vinegar
  • 2 medium cloves garlic (diced)
  • Salt (to taste)
  • Pepper (to taste)
  • 1/3 cup freshly shredded pizza mozzarella

Bruschetta Topping:

  • 6 medium tomatoes (chopped into 1/4” cubes)
  • 1/4 cup lightly packed fresh basil (diced)
  • 1 Tablespoon olive oil
  • 2 medium cloves garlic (diced)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Slice the chicken breasts in half horizontally to create two even thickness filets. Use a meat mallet to pound each filet to a thin even thickness.
  2. In a small bowl, mix together 1 Tablespoon olive oil, Italian seasoning, white wine vinegar, 2 cloves garlic, salt, and pepper to make the marinade. Coat the chicken in the marinade, cover, and refrigerate for at least 30 minutes (but preferably 6 hours).
  3. Preheat the oven to 425 F (218 C). Bake the chicken on a rimmed baking sheet for 12 minutes (or until the internal temperature reads 165 F on a meat thermometer). Sprinkle the shredded mozzarella over the chicken. Turn the oven to broil, and broil for 1 - 2 minutes, or until the cheese is melted, golden brown, and bubbly.
  4. Add the bruschetta topping ingredients to a medium bowl, and stir to combine. Spoon the topping over the cooked chicken, and serve immediately.
