I love to double up on Sunday dinners so that I have leftovers to base my meal prep for the week around. That’s how this Zucchini Boats Meal Prep came to be, and it’s quickly become a favorite in our house.
I typically make a pot of rice, drain and rinse canned corn and canned beans, and make a few of our favorite sauces while I’m making Sunday dinner. Then all I have to do is add in the leftovers from dinner and I’ve got healthy and filling dinners for the next few days ready to go!
Turkey Enchilada Stuffed Zucchini Boats are the cornerstone of this meal prep. They’re a healthy, delicious, and fun addition to this burrito bowl meal prep.
For me, delicious sauces are what keep me on track with meal prep. Without them, I’m probably not going to be excited enough about the meal (and I’ll likely end up making something else that sounds yummier – and less healthy). If you don’t want to make all of the sauces from scratch, you can make this meal prep easier by using store bought sauces – things like salsa, shredded cheese, queso, and sour cream are all great choices.
I’d definitely recommend choosing at least one of the homemade sauces to make. You can’t beat the flavor and it makes the meals so much more enjoyable (and so much more fun to look forward to)! Creamy Green Sauce, Easy Pico de Gallo Salsa, and Copycat Taco Bell Quesadilla Sauce all taste so amazing with this meal prep.
Zucchini Boats Meal Prep
Zucchini boats meal prep is the perfect healthy meal prep for the week! A combination of turkey enchilada stuffed zucchini boats and burrito bowls.
Ingredients
- 1 batch Turkey Zucchini Taco Boats
- ½ batch Copycat Taco Bell Quesadilla Sauce
- ½ batch Easy Pico de Gallo Salsa
- ½ batch Creamy Green Sauce
- ½ lime (cut into wedges)
- 8 cherry or grape tomatoes (washed and dried)
- 4 cups cooked rice
- 2 cups cooked black beans
- 1 ⅓ cups cooked corn
Instructions
- Divvy up the sauces into reusable lidded condiment containers.
- Assemble each meal prep container with 1 Turkey Zucchini Taco Boat, 1 cup rice, ½ cup black beans, ⅓ cup corn, 2 cherry or grape tomatoes, and one container each of Copycat Taco Bell Quesadilla Sauce, Easy Pico de Gallo Salsa, and Creamy Green Sauce.
Notes
You could make this meal prep even simpler by using premade sauces. Store bought salsa, guacamole, sour cream, shredded cheese, and queso dip are all great options.
The time for this recipe assumes that you already have the sauces, the zucchini boats, and the rice made. If you don’t, the time will be closer to 50 minutes to make everything.
The nutrition information is calculated including all of the sauces. This recipe is very adaptable based on your caloric needs. I almost always serve this with a leafy green salad. While this is the perfect amount for my husband, I normally have some leftovers that make up part of my lunch the next day. You can adjust any of the components to meet your specific needs.
