It tastes just like the coating on the strawberry shortcake ice cream bars. Plus, it’s made with only 3 ingredients and it’s ready in only 5 minutes.
Strawberry Shortcake Crumble
I first made these crumbles when I was making this layered Strawberry Crunch Cake, and I fell in love with them! After that, I started adding them to pretty much everything. I knew I had to write a recipe sharing just the crunch topping with all of you.
I was obsessed with the strawberry shortcake ice cream bars when I was a kid (they were my FAVORITE – it’s what I always bought when the ice cream truck stopped in our neighborhood). So finding a way to replicate that crumble topping at home was seriously a dream come true.
As soon as you try it, I guarantee that you’ll want to start adding it to all of your favorite desserts!
What Are Strawberry Shortcake Crumbs Made Of?
Freeze Dried Strawberries: Freeze dried strawberries are the secret ingredient in this recipe. They add so much strawberry flavor and that beautiful pink color, but they don’t add any moisture. It’s really the perfect ingredient to make this crumble topping, and you can’t substitute it with anything else. Unfortunately, fresh strawberries won’t work here.
Golden Oreos: Golden Oreos are the perfect cookie to make this crumble because they have both the cookie portion and the cream filling. You need both to get the true strawberry shortcake crumble flavor.
If you don’t have Golden Oreos (or can’t find them), you could try substituting it with Nilla Wafers or shortbread cookies. You’d have to adjust the amounts of the cookies though. You’ll also likely need to add a bit more butter to make up for the fact that there’s no cream filling.
Butter: Butter enriches the flavor of the other ingredients and brings everything together so that it’s a crumble and not just a powder. I used salted butter, but it’s totally up to you whether you use salted or unsalted. If you use unsalted, you may want to add a small pinch of fine sea salt to the food processor.
How To Make Strawberry Crunch Topping
Start by adding the freeze dried strawberries and Golden Oreos to a food processor. Pulse until you reach your desired texture. Then add in the melted butter and pulse until it’s combined. (See the recipe card below for the full printable instructions.)
Spread the strawberry crunch topping out on a rimmed baking sheet until you’re ready to use it. I find this step helpful if you’re planning to decorate a cake or cupcakes with it, but if you’re just planning to sprinkle it onto scoops of ice cream feel free to skip this step.

What To Serve With Strawberry Shortcake Crumbs
My favorite way to serve them is sprinkled on top of ice cream or pressed into a cream cheese frosting or buttercream frosting on a birthday cake.
This recipe would also taste so delicious sprinkled over a glazed Whipping Cream Pound Cake, cheesecake, cupcakes, vanilla pudding, homemade whipped cream with fresh berries, or in strawberry shortcake jars.
It’s a super simple no bake dessert that’s filled with all the classic summer flavors, so it will taste amazing paired with almost any summer dessert.

EASY Strawberry Shortcake Crumble Recipe
This Strawberry Shortcake Crumble (also called Strawberry Crunch Topping) makes the absolute best topping for ice cream, cakes, pudding, and cheesecake!
Ingredients
- 1 cup freeze dried strawberries
- 10 Golden Oreos cookies
- 3 Tablespoons butter (42 grams, melted)
Instructions
- Place the freeze dried strawberries and Golden Oreo cookies into a food processor.
- Pulse on low until it becomes a fine crumble.
- Add in the melted butter and pulse a few more times (until well incorporated).
Notes
If you don’t have a food processor, add the dry ingredients to a large Ziploc, then close it and use a rolling pin to crush everything to a fine texture.
